Rhubarb has a short season in Illinois and you may only be able to find it fresh from April until June! The leaves of rhubarb are toxic and should never be eaten - make sure to only eat the stems. The stems are tart and often used in desserts.

Look for rhubarb with firm, flat stalks. Avoid those that are curled or have cuts.
