Ingredients
10 slices bread, cubed
1/2 pound bulk pork sausage, cooked, drained, and crumbled
1/2 cup shredded low-fat Cheddar cheese
1/2 cup shredded low-fat Swiss cheese
1/2 cup canned mushrooms, drained
6 eggs, beaten
2 cup nonfat milk
salt and pepper, to taste
Preparation
Preheat oven to 350 degrees F.
Wash hands with soap and water.
Spray a 9-inch x 13-inch pan with non-stick cooking spray.
Arrange layers of bread, sausage, cheese, and mushrooms in pan.
Combine eggs and milk and pour over top.
Refrigerate 8 hours or overnight.
To bake, cover with foil and bake for 45 minutes. Cook until internal temperature of eggs and sausage are 160 degrees F on food thermometer.
Note
1. Other vegetables work great in place of mushrooms - try green onions, tomatoes, or zucchini!
2. For a lower-fat treat that still tastes great, use turkey or chicken sausage instead of pork.
