Ingredients
2 slices 100% whole wheat bread
2 slices cheddar cheese, reduced fat
1 avocado
1 Roma tomato, diced
1/8 teaspoon salt
1/8 teaspoon black pepper
Preparation
Wash hands with soap and water.
Place bread slices in toaster oven. Top each with slice of cheese. Toast until desired level of doneness with melted cheese. If no toaster oven is available, broil in oven for 2 minutes or until desired level of doneness with melted cheese.
Gently rub tomato and avocado under cold running water.
While toasting, cut avocado in half, from stem to stem. Be careful to hold knife away from hand while cutting. Remove pit with a spoon. Discard avocado pit and scoop pulp into a small bowl. Mash avocado pulp with diced tomato.
Top toast with avocado and tomato mixture. Sprinkle salt and pepper on top.
Note
To reduce sodium (salt), choose lower-sodium cheese and bread and remove salt from recipe.
