Ingredients
2/3 cup sugar
3 medium ripe bananas, mashed
1/4 cup butter, softened
1 tablespoon orange juice
1 egg
1 1/4 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 cup raisins
Preparation
Preheat oven to 325 degrees F.
Wash hands with soap and water.
Grease and flour bottom of 9-inch loaf pan.
In a large bowl, blend sugar, bananas, butter, orange juice, and egg together. Beat 1 minute at medium speed with a hand or stand mixer.
Stir in remaining ingredients.
Pour batter into greased loaf pan.
Bake for 60-70 minutes or until toothpick inserted into center comes out clean.
Immediately remove bread from pan. Cool before serving.
Note
To remove bread from hot loaf pan, turn pan upside down over a clean plate. Use oven mitts to hold pan. If bread will not loosen, use a small knife to help remove from pan.
