Bean Salad with Rice

1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) mandarin oranges in light syrup/juice, drained
2 cup cooked rice
4 tablespoon nonfat Italian salad dressing
6 cup lettuce, torn into bite-size pieces
Wash hands with soap and water.
Gently rub lettuce under cool running water.
Combine black beans, mandarin oranges, brown rice, and salad dressing in a large bowl.
Refrigerate to chill well.
Serve over lettuce.

- Use brown rice for added fiber - Full recipe makes about 4-5 cups of bean/rice/orange mixture - Each serving is about 1-1.25 cups bean/rice/orange mixture and 1 cup lettuce
