Ingredients
2 slices whole-wheat or whole-grain bread, toasted
1 teaspoon butter or margarine
2 eggs, lightly beaten
1 Tablespoon 1% milk
1 medium tomato, sliced
1 small green or red bell pepper, cut into thin strips
2 Tablespoons shredded fat-free mozzarella cheese
Salt (dash)
Pepper (dash)
Preparation
Wash hands with warm water and soap. Wash fresh vegetables before preparing.
Melt butter in a small skillet over medium heat.
In a small bowl, add milk, salt and pepper to eggs and cook in the pre-heated skillet until softly scrambled.
Cover each slice of toast with sliced tomatoes, overlapping.
Divide eggs and place evenly on top of tomatoes.
Arrange pepper strips to make eyebrows/eyes, nose and a smiling mouth. Use cheese for hair. (Your kids might like to do this part.)
