Ingredients
1 tablespoon vegetable oil
1 package Firm Tofu, drained
1/2 pound Long Beans, or green beans
3 tablespoons peanuts, crushed
1 tablespoon vegetable oil
1 teaspoon sugar
1 tablespoon soy sauce
1 tablespoon lime juice
Preparation
Wash hands with soap and water.
With a cloth or paper towel, press tofu for at least 30 minutes (see notes).
Cut tofu into small cubes.
Heat oil in a skillet. Pan fry tofu in oil; set aside.
Blanch long beans by cooking in boiling water for 5 minutes until slightly tender, then placing them immediately into a bowl of ice water to stop cooking. Drain the beans.
Make dressing by mixing peanuts, oil, soy sauce, sugar and lime juice.
Chill tofu and long beans; toss with dressing and serve warm or chilled.
