Cranberry Chicken Grilled Cheese Sandwiches

Ingredients
8 slices whole-grain or whole-wheat bread
¼ cup Dijon mustard
½ cup jellied cranberry sauce
4 slices American cheese
12oz shredded cooked chicken, or 1 can (12.5 ounces) chicken
8 teaspoons spreadable margarine, divided
Preparation
Wash hands and surfaces.
Spread 1 tsp margarine onto 4 slices of bread. Place the slices of bread margarine-side down on a plate or cutting board (the side with margarine is the outside of the sandwich).
In a medium bowl, mix cranberry sauce and mustard until well blended, then stir in shredded chicken. Divide the chicken filling onto the prepared bread slices, spreading the mixture out to the edges of each piece of bread.
Place one slice of cheese on each sandwich on top of the chicken.
Place the remaining pieces of bread on top of each sandwich. Spread the remaining margarine on the top of each (1 tsp. margarine per sandwich top).
Heat a large skillet over medium-low heat.
Place two sandwiches in skillet, pressing down lightly with the back of a spatula. Cover and cook until bread is golden brown and cheese is melted, about 3-5 minutes per side.
Repeat step 7 with remaining sandwiches.
