Ingredients
PANCAKES:
2 cups pancake mix
2 eggs (omit if using “Complete” pancake mix)
¾ cup skim or low-fat milk (omit if using “Complete” pancake mix)
1 teaspoon vanilla extract
1/2 cup canned whole berry cranberry sauce
Nonstick cooking spray to grease skillet
SYRUP (optional):
1/2 cup whole berry cranberry sauce
¼ cup maple syrup
Preparation
Wash hands and surfaces.
Preheat skillet over medium to medium-high heat.
Mix dry pancake mix, eggs, milk, vanilla and 1/2 cup cranberry sauce in a large mixing bowl
Spray skillet with nonstick cooking spray and pour in ¼ cup of batter per pancake. Cook pancakes for 2-3 minutes per side.
To make the syrup (optional): Combine 1/2 cup cranberry sauce and ¼ cup maple syrup in a small saucepan. Warm over low heat while the pancakes cook.
Serve pancakes and drizzle with syrup of your choice, or top with fresh berries!
