1/4 cup low-fat milk
2 tablespoon salsa
2 tablespoon black olives, diced
2 tablespoon cheddar cheese, shredded
Spray microwave-safe dish with non-stick spray.
Wash hands with soap and water.
Crack eggs and place in mixing bowl.
Add milk to eggs and stir well with wire whisk or fork.
Pour mixture into microwave dish, cover and microwave on high for 4 minutes. Internal temperature of eggs should reach 160 degrees F. Eggs should not be runny.
Remove eggs from the microwave using potholders.
Remove the lid and use a fork to break the eggs into bite size pieces.
Top with salsa, black olives, and shredded cheese.
Replace the lid and let sit for 1-2 minutes to allow cheese to melt.
