Ingredients
1/2 cup butter
1/4 cup sugar
1 teaspoon vanilla extract
1 egg
1 cup all-purpose flour
1 cup whole wheat flour (if no whole wheat flour, use additional all-purpose flour)
2 teaspoon baking powder
8 ounces Neufchâtel cheese (reduced-fat cream cheese) or reduced-fat strawberry cream cheese
1/8 cup (2 tablespoons) sugar (eliminate if using strawberry cream cheese)
1 cup fruit, sliced, such as bananas, strawberries, mandarin oranges, peaches, or pineapple
Dash of cinnamon
Preparation
Preheat oven to 375 degrees F.
Wash hands with soap and water.
Gently rub fruit under cool running water.
Cream together butter and sugar. Add vanilla extract and egg. Mix until evenly combined.
Add flours and baking powder to mixture. Mix well. Dough may be crumbly but will pack down into pan. If too dry, add a teaspoon of water at a time to help moisten.
Spray 9” x 13” baking pan with nonstick cooking spray. Press crust to about 1/8-inch thick.
Bake 15-20 minutes or until cooked throughout and lightly brown on top. Let crust cool.
Mix Neufchâtel cheese with sugar. Do not add sugar if using strawberry cream cheese.
Spread cheese evenly onto crust. Top with sliced fruit and cinnamon.
