Ingredients
16 ounces frozen stir-fry vegetables
½ pound lean ground beef (15% fat or less) or ground turkey
2 cups water
2 packages beef or soy sauce-flavored ramen-style noodles
1 Tablespoon fresh ginger, grated, or ¼ teaspoon ground ginger
3 cloves garlic, minced, or 1 teaspoon garlic powder
4 green onions, thinly sliced (save one for garnish at the end)
Black pepper, to taste
Preparation
Wash hands with soap and water.
Gently rub green onions under cool running water.
Cook stir-fry vegetables in the microwave following package instructions. Drain and set aside.
Spray a large skillet with nonstick cooking spray. Add ground beef, ginger, and garlic to skillet over medium-high heat and brown meat until no pink is visible. Drain fat from skillet.
Add water and one seasoning packet from ramen-style noodle package to the cooked beef. Stir.
Add cooked and drained stir-fry vegetables and three of the sliced green onions to the mixture in the skillet. Bring to a boil over high heat.
Break ramen-style noodles into smaller pieces. Use ramen-style noodles from both packages.
Add noodles to skillet and reduce heat to low. Cover and simmer for 3-5 minutes or until noodles are cooked and tender. Stir occasionally.
Serve hot. Add black pepper, if desired. Top with remaining fresh sliced green onion.
