Ingredients
1 can pink salmon* (16 ounces, drained)
16 saltine crackers (1/2 cup crushed)
1 large egg
1 tablespoon vegetable oil
non-stick cooking spray
Preparation
Wash your hands with soap and warm water.
In a large mixing bowl, combine salmon, cracker crumbs and egg.
Divide mixture into 8 balls and shape into large tots about 1-1/2 inches long.
Lightly coat a skillet with cooking spray. Then, add 1 tablespoon vegetable oil and preheat the skillet on medium for 1 to 2 minutes.
Add fish tots, turning every 2-3 minutes. Cook until golden brown on all sides and internal temperature reaches 165°F.
Serve Immediately.

* You can remove the bones and skin from the canned salmon, if desired. Some people leave the bones and crush them finely to add some calcium to the recipe.
