Ingredients
1 can (15 ounces) pinto beans, drained and rinsed
1/4 cup taco sauce
1 teaspoon chili powder (if desired)
1 cup shredded, reduced-fat Monterey Jack or Cheddar
optional: shredded lettuce, chopped tomatoes, sliced green onions
Preparation
Wash hands with soap and water.
Mash the beans in the bowl.
Add the taco sauce and chili powder to the beans and mix well.
Spread bean mixture evenly on a plate, and sprinkle shredded cheese over the beans.
Top with lettuce, tomatoes, and green onions, if desired. Wash produce under cool running water beforehand.
Serve with low-fat crackers, tortilla chips, or raw vegetable sticks.
