Main Dish Salad

Ingredients

1/2 head Romaine lettuce, torn into pieces
1/2 head red cabbage, chopped
2 medium carrots, peeled and sliced
1 cucumber, peeled and sliced
1 green bell pepper, cut into strips
2 heads broccoli, cut into florets
3 medium tomatoes, cut into wedges
2 can (15 oz.) kidney or garbanzo beans, drained and rinsed
6 ounces shredded low-fat cheddar cheese
1/4 cup nonfat salad dressing

Preparation 

  1. Wash hands with soap and water.

  2. Gently rub all vegetables under cool running water and prepare as noted above.

  3. In a large bowl, combine all prepared vegetables, beans, and cheese.

  4. Add salad dressing and toss together lightly before serving.
