Ingredients
Nonstick cooking spray
1 teaspoon butter
2 slices whole grain bread
2 slices part-skim mozzarella cheese
1 ripe tomato, sliced
1/2 tablespoon fresh basil, thinly sliced, or ½ teaspoon dried basil leaves
Preparation
Wash hands with soap and water.
Gently rub produce under cool running water.
Heat large skillet or grill pan over medium heat on stove. Spray with non-stick cooking spray.
Spread ½ teaspoon butter to one side of each piece of bread. Add to pan, butter side face down.
Place slice of cheese on top of bread. Top with sliced tomato and fresh or dried basil leaves.
Cover skillet and heat until cheese is melted and bread is slightly browned on bottom. Different cooking method: broil in oven on baking sheet until cheese is bubbly, about 2-3 minutes.
