Pea Salad

Ingredients
1 1/2 cup canned peas or 1 package (10 ounces) frozen peas
1/4 cup vegetable oil
1 1/2 tablespoon vinegar
1 tablespoon onion, chopped
1 tablespoon sweet pickles, finely chopped
1 tablespoon pimentos, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Preparation
Wash hands with soap and water.
If using canned peas, drain. If using frozen peas, cook, drain, and cool before using. Add peas to bowl.
Mix remaining ingredients in a separate bowl. Pour over peas and gently mix.
Refrigerate salad for at least 2 hours before serving.
Note

If desire to use fresh peas, you must cook them beforehand. Follow these instructions: 1. In a medium-saucepan, add fresh peas and enough water to cover peas. 2. Bring to a boil and cook peas about 6 minutes or until tender. 3. Drain well. 4. Immediately add cold water to cool down peas, drain.
