Ingredients
3 medium potatoes
4 cup reduced sodium chicken broth
1/2 cup cooked ham, chopped
1 cup nonfat dry milk powder (see notes)
1/2 cup onion, chopped
1/2 cup corn
Preparation
Wash hands with soap and water.
Wash potatoes and peel. Cut potatoes into 1-inch cubes.
Place cubed potatoes in a large pot.
Add broth to pot with potatoes and bring to a boil. Partially cover pot with lid and simmer 20 minutes or until potatoes are tender but not mushy.
Add ham, dry milk powder, onion, and corn to the pot.
Bring to a boil. Reduce heat and simmer for 5 minutes.
Serve hot.
Refrigerate leftovers within 2 hours.
Note
- If you don't have dry milk powder, fluid milk can be used instead. Reduce broth to 3 cups and use 1 cup fluid milk in place of dry milk powder.
