Ingredients
1 can pumpkin (15-ounce)
1 cup sugar
¼ cup vegetable oil
1 cup plain low-fat yogurt
1½ cups all-purpose flour
1½ cups whole wheat flour
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
½ teaspoon salt
1 cup raisins
Cooking oil spray
Preparation
Wash hands with soap and water.
Preheat the oven to 350 degrees F.
Spray inside of two 9 x 5 x 3-inch loaf pans with cooking spray.
In a large mixing bowl, beat together pumpkin, sugar, oil, and yogurt.
In a medium bowl, combine the all-purpose and whole wheat flours, baking powder, baking soda, cinnamon, and salt. Add to pumpkin mixture, and stir until just moistened.
Stir in raisins.
Pour into 2 greased loaf pans and bake for 50-60 minutes.
Cool on a wire rack for 10 minutes. Remove from pan and cool completely.
Note
This recipe makes two loaves of pumpkin bread. If you only have one loaf pan, bake one loaf at a time. Or, divide each recipe ingredient in half to make just one loaf.
