Wash hands with soap and water.
Prepare pudding according to package directions, except substitute evaporated milk for regular milk. Only use 12 ounces of evaporated milk for recipe.
Chill pudding until thickened, about 10-15 minutes.
Add pumpkin puree and pumpkin pie spice or cinnamon. Mix thoroughly.
Chill before serving.
Top with non-dairy whipped topping to serve.
- Recipe makes 3 1/2 cups of pumpkin pudding, or 7 servings (1/2 cup each).
