Ingredients
Cooking Spray
12 Eggs
Salt and Pepper to Taste
1 cup spinach, chopped
6 slices bacon or bacon substitute, cooked and crumbled
2 tomatoes, diced or 1 can diced tomatoes, 14 ounces, drained
2/3 cup cheese, shredded
1 cup salsa (optional)
Preparation
Wash hands with soap and water.
Preheat oven to 375 degrees F. Coat 12-cup muffin tin with cooking spray.
Crack and mix eggs in a bowl.
Add spinach, bacon, tomatoes, cheese, salt, and pepper to egg mixture. Stir to mix.
Divide egg mixture evenly among muffin tin cups
Bake for 15 to 18 minutes or until eggs are set.
Top with salsa and serve immediately or store in refrigerator until ready to eat.
Note
Recipe time can be decreased by using precooked bacon or ham.
Replace bacon with leftover chicken or turkey for variety.
