Ingredients
                        1 whole chicken, about 6 pounds
    
                        2 tablespoon canola oil
    
                        1 teaspoon salt
    
                        1 teaspoon black pepper
    
                        1 teaspoon garlic powder
    
                        1 teaspoon parsley
    
                        1/2 onion, sliced
    
                        1 lemon, sliced
    
          Preparation
                        Preheat oven to 425 degrees F.
    
                        Pat one whole chicken dry with a paper towel, and rub with canolaoil.
    
                        In a small bowl mix salt, pepper, garlic, and parsley.
    
                        Sprinkle spice mixture evenly over chicken.
    
                        Stuff cavity with onion and lemon and place in baking dish.
    
                        Cook at 425°F until thigh meat reaches 165°F (about one hour). Check the thickest part of the thigh and do not touch the bone.
    
                        Let rest for 10 minutes and serve.
    
              Note
              Serve with whole grain bread and broccoli for a filling meal.
Note: Makes approx. 12 servings of 3-4 ounces each.
