Simple Roasted Vegetables

Ingredients

nonstick cooking spray
1 tablespoon vegetable oil
2 cup raw vegetables, such as carrots, zucchini, summer squash, or bell peppers, roughly chopped
1/2 teaspoon garlic powder
1/8 teaspoon black pepper

Preparation 

  1. Preheat oven to 400 degrees F.

  2. Wash hands with soap and water.

  3. Gently rub vegetables under cool running water.

  4. Spray a baking sheet with nonstick cooking spray.

  5. Add vegetables, seasonings, and vegetable oil to a medium sized bowl. Mix to coat vegetables with oil and seasonings.

  6. Spread vegetables out on baking sheet.

  7. Bake until vegetables are tender, about 45 minutes.
