Ingredients
3 ounces Neufchâtel cheese (reduced-fat cream cheese), softened
2 tablespoon sugar
8 ounces lowfat vanilla yogurt
1/4 cup fresh strawberries (about 2 large berries)
Preparation
Place cream cheese on the counter for 30 minutes to soften.
Wash hands with soap and water.
Gently rub fruit under cool running water. Remove stems.
Slice strawberries and place them in a small bowl. Crush the berries. You can use the bottom of a cup, a fork, or potato masher.
Mix cream cheese and sugar together using a sturdy spoon, or use a hand mixer, blender, or food processor to blend. Mix until smooth.
Add yogurt and berries to cream cheese mixture and stir until well blended.
Refrigerate until serving time.
Serve with sliced apples or graham crackers.
Note
Frozen, unsweetened strawberries would work well in this recipe, too - just thaw them before adding in step 4.
