Onions are one of our favorite vegetables for adding flavor! Look for Illinois onions between April through November (spring to early winter). If cutting onions leaves you teary-eyed, slice it in half and then rinse it under running water. This helps remove some of the sulfur compounds that cause the tears!

Onions should be firm and dry, without cuts or soft spots. Store in a dry, cool place, such as inside a cabinet or pantry, for up to 4 weeks.
