Ingredients
16 ounces cooked black-eyed peas or 2 cans (15 ounces each) black-eyed peas, drained and rinsed*
1/2 cup red onion, chopped
1/2 cup green bell peppers, chopped
1/2 cup celery, chopped
1/4 cup nonfat Italian dressing
Preparation
Wash hands with soap and water.
Gently rub produce under cool running water.
In a medium bowl, combine all ingredients and mix well.
Cover and chill before serving.
Note

*When using the dried peas, soak them over night with enough water to cover the peas. Drain peas, and rinse. Cook peas in 6 cups of chicken broth, bring to a boil. Cover and simmer for 50 minutes or until tender. When using the canned peas, drain and rinse before using in the recipe.
