Ingredients
2 tablespoon oil
1 medium onion, chopped
3 stalks celery, chopped
1/2 green pepper, chopped
1 can (28 ounces) diced tomatoes, drained
3 cup cooked rice
1/2 cup finely shredded low-fat Cheddar cheese
Preparation
Wash hands with soap and water.
Gently rub produce under cool running water, then chop.
Prepare rice according to package directions.
Heat oil in skillet over medium heat.
Add onion, celery, green pepper and cook slowly until tender.
Add tomatoes, cooked rice, and shredded cheese.
Cover and cook on low heat until cheese melts and mixture is hot.
