Ingredients
1 pound (16oz) bag of frozen corn, thawed
2 Tablespoons chopped red onion
2 Tablespoons lemon juice (about 1 lemon)
2 Tablespoons olive oil
1 Tablespoon chopped fresh basil (or 1 teaspoon dried basil)
Preparation
Wash hands with soap and water.
Place thawed corn in a bowl. Add onion and basil.
In a small bowl, whisk together lemon juice and oil.
Stir the oil/lemon mixture into the corn mixture. Add salt and pepper to taste (optional).
Refrigerate at least 30 minutes to allow flavors to develop.
