Ingredients
2 pounds chicken thighs, skin removed
16 ounces (1 jar) salsa
6 whole wheat or corn soft tortillas
1 medium tomato, chopped
1 cup lettuce, shredded or cut into bite-sized pieces
Preparation
Wash hands with soap and water.
Spray inside of slow cooker with nonstick cooking spray.
Pour 1/4 cup salsa into slow cooker.
Place chicken pieces into slow cooker, on top of salsa.
Pour remaining salsa on top of chicken.
Cover and cook on high for 2-3 hours or low for 5-7 hours. Cook until internal temperature reaches 165 degrees F on food thermometer.
Remove chicken from slow cooker. Shred meat and discard any bones.
Serve tacos with tortillas, tomatoes, and lettuce.
Note
Sodium content may be too high for those following low sodium or low salt diets.
