Ingredients
1 whole-wheat English muffin
2 Tablespoons of pasta sauce
2 Tablespoons low-fat mozzarella cheese, shredded
2 Tablespoons chopped vegetables*
Preparation
Wash hands with soap and water. Gently rub produce under cool, running water and chop into small pieces.
Spread 1 Tablespoon of pasta sauce on top of each English muffin half.
Sprinkle on 1 Tablespoon mozzarella cheese on each half.
Sprinkle 1 Tablespoon chopped vegetables on each half.
Bake in the oven or toaster oven at 425 degrees, or in the microwave on high until cheese melts.
